MACARONI SALAD

8 oz pkg macaroni (cooked and drained)

1/2 lb. cubed american cheese

1/2 lb ham cut in strips

1 can pineapple chucks (drained)

1/2 c sweet pickle relish

1 c chopped onion

1/2 c diced pimento

1/2 c salad dressing

1 teas salt

Combine ingredients. Toss lightly to mix well.

 

HAM SALAD

3 lb bologna

5 diced sweet pickles

4 sm chopped onions

5 boiled eggs (chopped)

salt

pepper

Miracle Whip

 

mix 1st 4 ingredients in food processor and blend until well chopped, add in enough Miracle whip to mix well...salt and pepper to taste

CRANBERRY SALAD

1 lb cranberries

2 unpeeled oranges

1 peeled orange

1 c sugar

1 cup chopped nuts

2 large apples (crushed)

1 box strawberry jello

Grind cranberries and oranges. Stir in sugar, nuts and raw apples. Make jello according to box instructions.....stir in remaining ingredients then refrigerate until stiff

SPINACH SALAD

1 pkg fresh spinach

1/2 pkg Pepperidge farm herb dressing

1/2 lb fried crisp bacon

8 hard boiled eggs

break spinach into pieces, break bacon into bits, dice 6 of the eggs, mix well with dressing mix. Toss with Mexican dressing

CHICKEN AND HAM SALAD

1 1/2 c diced, cooked chicken

1 1/2 c diced, cooked ham

1/2 teas minced onion

1/2 c chopped celery

1/4 c french dressing

6 med tomatoes

1/2 c miracle whip

1 TBLS mustard

Combine first 5 ingredients. Let stand for 1 hour and drain. Peel tomatoes, scoop out centers, sprinkle tomatoe shells with salt. Invert on plate and let chill in refrigerator. Combine salad dressing with mustard, add to chicken mixture. Place tomatoe shells on leff lettuce. Fill with chicken and ham mixture. Serve chilled

WALDORF CREAM SALAD

1 3oz pk lemon-lime jello

1/2 c cottage cheese

1 c boiling water

1 teas lemon juice

1/2 c 7up or sprite

1/2 c diced unpealed apples

1/4 c sliced celery

1/4 c chopped walnuts

1/4 c white seedless grapes

Dissolve jello in boiling water. Add lemon juice, 7up, and chill until set. Fold in cheese, add remaining ingredients, folding in to blend thoroughly. Chill in mold.

FOR LUNCH MAIN DISH: reduce apples to 1/4 c and add 1/2 c cubed chicken. Serve with toasted crackers.

FREEZER COLESLAW

1 lg head cabbage

1 lg bell pepper

2 carrots

Grate vegetables. Sprinkle with 1 TBLS salt and let stand 1 hour. Squeeze and drain.

Combine and bring to a boil the following

2 c sugar

3/4 c water

3/4 c vinegar

1 teas celery seed

1 teas mustard seed

after liquid is cool, pour over vegetables and mix. Pack in plastic containers. Freeze. Will keep 1 yr.

GREEN FLUFF SALAD

1 box lime jello

1 med. can crushed pineapple

1 8oz pkg whipped cream (beat stiff)

1/4 c chopped nuts

1/2 c minature marshmallows

Mix jello in large sauce pan with 1 cup of hot water. Add the pineapple plus the juice and bring to a boil. Turn burner on simmer. Add cream cheese which has been broken into pieces. Mix and add marshmallows. Stir until all is melted. Cool. When slightly thickened add the whipped cream and nuts and mix well. Chill for several hours.

CHERRY SALAD SUPREME

1 3oz pkg raspberry jello

1 21oz can cherry pie filling

1 3oz pkg lemon jello

1 3oz pkg cream cheese(softened)

1 c crushed pineapple

1 c whipped topping

1 c minature marshmallows

2 TBLS finely chopped nuts

Dissolve raspberry jellow in 1 c boiling water. Stir in pie filling and turn into 9x9x2" baking dish. Chill until partially set. Dissolve lemon jello in 1 c boiling watter. Beat together cream cheese, and mayonnaise. Gradually add lemon juice. Stir in undrained pineapple. Fold whipped topping into lemon mixture with marshmallows. Spread on top of raspberry. Lay top with nuts. Chill until set.

SAUERKRAUT SALAD

1/2 c oil

1/2 c sugar

1 can sauerkraut (drained)

2 c diced celery

1/2 c diced onion

1/2 c diced green pepper

1/2 c diced pimento

1 teas caraway seeds

1 teas celery seed

Heat vinegar, sugar and oil until sugar dissolves. Add chopped vegetables to sauerkraut and mix with rest of ingredients. Let stand at least 3 hours. This will keep in refrigerator for 2 weeks

PRETZEL SALAD

1 c slim pretzels broken in pieces

1 stick melted margarine

3 TBLS sugar

Mix together and back at 350 degrees for 10 minutes. Cool and break into small pieces. Mix 2 pkg dream whip as directed (or you can use 1 lg cool whip), add 1 8oz pkg cream cheese and 1/2 c sugar. Top with pineapple pie filling or crushed drained pineapple.

BEAN SALAD

1 can green beans

1 can kidney beans

1/2 green pepper cut into small pieces

1 can waxed beans

1 jar carrots

1 lg onion diced

1 TBLS celery seed

3/4 c sugar

1/3 c oil

2/3 c vinegar

Mix together well

5 CUP SALAD

1 can undrained fruit cocktail

1 can drained mandrin oranges

1 c minature marshmallows

1 c chopped pecans

1 c sour cream

1 c flaked coconut

Mix well and chill for 1 hour.

RIBBON SALAD

1 pkg lemon jello

1 pkg strawberry jello

1 pkg lime jello

1 c milk

16 large marshmallows

1 8oz pkg cream cheese

1 pk dream whip

1 can crushed pineapple(drained)

2 c chopped nuts

Prepare green jello and pour into large cake pan, chill until firm. Scald milk, add marshmallows, lemon jello (right from package), add cream cheese, beat until smooth. When cool add dream whip, curshed pineapple, and nuts. Mix well. When well mixed pour over green jello and chill until firm. Then prepare red jello and pour over previou mixture and chill until firm. Cut into squares and serve

MOLDED CRANBERRY SALAD

1 pkg strawberry jello

1 pkg orange jello

1 c hot water

2 1/2 c cold water

1 can whole cranberry sauce

1 c chopped celery

1 c diced unpeeled apple

1/2 c chopped walnuts

Dissolve jello in hot water. Add cold water and chill until partially set. Fold in remaining ingredients. Turn into mold and chill until firm. Makes 10 - 12 servings

SPEGETTI SALAD

1 lb spegetti noodles (cooked and drained)

1 pkg good seasons italian dressing

2 large diced tomatoes

1 large diced cucumber

1 large diced green pepper

1/2 bottle salad seasoning

6 diced green peppers (onion and green stems)

Mix italian dressing according to pkg directions. Set aside with noodles.

Pour noodles in large bowl, stir in salad seasoning, and chopped vegetables. toss with italian dressing and chill.

CREAMY CUCUMBER SALAD

2 lg cucumbers diced

1 med onion diced

1 can sweet peas (drained)

2 TBLS dry chives

1 teas dill weed

Miracle whip

Mix all ingredients together except miracle whip. Then stir in enough miracle whip to coat all vegetables. Chill

ORANGE SALAD

2 pkg orange jello

1 can mandarin oranges (drained)

1 can pineapple tidbits (drained)

1 container cool whip

1 contain small curd cottage cheese

1 c chopped nuts

Pour dry jellow over fruit and mix. Add cool whip, cottage cheese and walnuts. Chill

CORN SALAD

4 c corn kernels

1/2 chopped green pepper

2 TBLS pimento

1/4 c chopped sweet pickles

Cut the kernels from enough cooked corn ears to measure 4 cups of kernels. In a bowl combine and toss with french dressing. Arrainge on a bed of leaf lettuce or romaine lettuce. Serve at room temperature
