ORANGE MALLOW YAMBAKE
1 17oz cans Yams (drained) 2 Peeled and Sliced Oranges 1/4 cup Brown Sugar 1 1/2 cup Minature Marshmallows Arrange yams
and orange slices in a 1 1/2 quart shallow baking dish. Sprinkle with brown sugar. Cover with marshmallows. Bake at 350 degrees
for 20 - 25 minutes. Until marshmallows are brown. Serves 6-8
PIMENTO POTATOES
10 medium Diced Potatoes Salt 1 stick Margarine 1 sm Jar Cheese Whiz 1 sm can Diced pimentos (do not drain) Cook potatoes
for 5 minutes. Salt potatoes to taste. In a saucepan melt margarine, cheese whiz and pimento with liquid. Heat until margarine
and cheese is melted. Pour over drained potatoes. Mix well. Bake in buttered 9x12x2 inch baking dish at 350 degrees for 30
minutes.
BAKED POTATOES
2 lb Hash browns 2 Sticks melted margarine 2 cups grated cheddar cheese pepper 1/2 cup chopped onion 2 cups Sour cream
1 can Cream of chicken soup 2 cups crushed Corn Flakes Lay potatoes in a 9x12 inch pan. Pour on 1 stick of melted butter.
Mix cheese, pepper, ohio and sour cream together and spread on potatoes. Spread on soup then pour other stick of margarine
over mixture. Sprinkle with corn flakes. Bake at 350 degrees for 1 hour.
CHEESEY SCALLOPED POTATOES
1/4 cup Chopped Onion 1/4 cup Margarine 1/4 cup Flour 1 teas Salt 1/8 teas Pepper 3/4 cup American cheese 2 1/2 cups milk
5 cups Thinly sliced potatoes To make sauce, cook onion in margarine utnil tender but not brown. Stir in flour, salt and pepper.
Add milk: cook and stir until thickend and bubbly. Add cheese. Cook 2 more minutes. Remove from heat. Place half the potatoes
in a greased 2 quart baking dish. Cover with half the sauce. Repeat layers. Bake covered at 350 degrees for 45 minutes. Stirring
once. Uncover and bake another 30 mintues or until potatoes are done. Make 4-5 servings.
SCALLOPED POTATOE BAKE
10 lb potatoes (peeled and sliced thinly) 2 lb Velveeta cheese (cut into small squares) 1 Stick Margarine 1 cup milk 4
TBLS dehyrdrated onion 4 TBLS parsley flakes 4 cups diced ham pieces Cook potatoes until started to get tender but not done.
While potatoes are cooking put cheese, margarine, milk, onion and parsley in a sauce pan and heat until cheese and margarine
is completely melted. Set aside until potatoes are ready. Drain pototoes and put in large baking pan. Stir in ham pieces.
Stir in cheese mixture. Bake at 350 degrees for 30 minutes. Serve with salad to make complete meal.
STEAMED CABBAGE AU GRATIN
1/2 cup water 1 cup diced cabbage 2 oz hard cheese 1/2 teas Garlic Powder 1/2 teas Onion Powder 1/4 teas Salt 2 oz Milk
Steam cabbage in water until tender. In small saucepan melt cheese, milk and seasoning. Pour over cabbage. Makes 1 serving.
FRENCH FRIED ONIONS
3 -4 Bermuda Onions 1 cup Milk 2 Eggs 1 cup flour 1/2 teas salt 1/4 teas pepper 1 teas Baking powder 1 Tbls melted Crisco
Heat Deep Fryer to 350 degrees. Slice onions and separate into rings. Put remaining ingredients into bowl and whip until smooth.
Dip onion rings into batter. Drip excess batter from rings and lower into hot fat. Fry until golden brown.
JIFFY POTATOE SOUP
1 1/2 Cup Cubed Uncooked Potatoes 1 Tbls Chopped Onions 1 Tbls. Butter or Margarine 1 Tbls Chopped Parsley 2/3 Cup Boiling
Water 2 Cup Milk 1 teas. Celery Salt 1/8 teas Pepper Cook potatoes, onion and butter in boiling water until potatoes are soft
and very tender. Add milk, parsley and seasonings. Heat until almost boiling. Serve with oyster crackers.
VEGETABLE SOUP
1/2 med Green Pepper .... diced 1/2 cup Green beans 1 teas Dehydrated onion flakes 1/4 cup sliced mushrooms 1/4 cup chopped
celery and celery greens 1 cup tomatoe juice 1 cup water 1 Beef Boulin Cube Combine in saucepan and simmer 1 hour. Makes 1
serving.
